Pancake Day Fun At The Corner Café

It's that time of year when we can gorge ourselves once again on Pancakes.
Pancakes are also known as Johnnycakes, Griddle or Hotcakes. As a breakfast, it is said to be the oldest breakfast food in history, going back as far as the Stone Age, although I doubt they had on their pancakes what we have today.


The word Pancake first appeared in England in the 15th century. The practice of pouring batter into a pan and frying it is common in most cultures round the world.

In England, Shrove Tuesday has been celebrated since 1100AD. It is the day before Ash Wednesday.
It is referred to as Fat Tuesday as well as it is the end of Mardi Gras, which starts on the 12th night of Christmas and goes on until Ash Wednesday. Mardi Gras is French for Fat Tuesday as it reflects the practice of eating rich fatty foods before the fasting of Lent!

Well, I suppose if we have to fast for 40 days we may as well fill our stomachs today with some mouth-watering pancakes.
Pancakes themselves are easy to make.

100gms plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil, plus extra for frying.

Put the ingredients into a bowl and whisk to a smooth batter. Put to one side for 30 mins to rest.
Dig out a medium frying pan and wipe over with some oiled kitchen roll then heat over a medium heat.
Cook pancakes for 1 min on each side until golden keeping them warm in a low oven as you go along.
If you feel brave enough you could try tossing them and see if you can catch them in the pan before they hit the deck!!

Traditionally pancakes are served with fresh lemon juice squeezed over them and a bit of sugar if you want it.
Or some people have fresh orange instead of lemon.

Some people now are going in for Pancake Art Images, and they are very effective as well.

What you can have with your pancakes is limited only by your imagination, but here are a few ideas.

Raspberries and syrup

Blueberry and Raspberries. Lovely

Oranges and Syrup. Not sure but don’t like syrup anyway

There are loads of other things you can have with pancakes: chocolate and banana, now that sounds good, chocolate chip, strawberries or any sort of berries. As I say, the list is endless. Whatever you try, I hope you enjoy them and let us know your favourite.
